Beef Ragu

In southern Italy, ragù is often made from large whole cuts of beef and pork, and sometimes regional sausages, cooked with vegetables and tomatoes. After a long simmer, the meat is removed and can be served as a separate dish without pasta. Examples of such dishes are ragù alla napoletana (Neapolitan ragù) and carne al ragù
